At Carrara, we supply a variety of gelato base premix, gelato paste and gelato stabilisers to gelato and ice cream producers. We are the official distributor of the full range of Emmendatori & Vayra 1905 full range of gelato ingredients from Italy. 

Gelato Base Premix 

The gelato base premix is a premix to add to milk, cream and sugar to create a plethora of gelato & ice cream flavours. Gelato base premix offers the following benefits:
  • Simplifies formulation of recipes
  • Saves storage space of multiple ingredients
  • Reduces the chance of human error 

Types of gelato base premix:

​Base 10 gelato: Comprises mainly dextrose, emulsifiers and stabilisers. You only have to add milk, whipping cream, sugar, skimmed milk powder and dextrose to the Base 10 gelato premix to create a gelato base.
Dosage: 10g/kg mix

Base 50 gelato: Comprises mainly dextrose, emulsifiers and stabilisers. You only have to add milk, whipping cream, sugar, skimmed milk powder to the Base 50 gelato premix to create a gelato base.
Dosage: 50g/kg mix

Base 100 gelato: Comprises mainly dextrose, maltodextrin, skimmed milk powder, emulsifiers and stabilisers. You only have to add milk, whipping cream, sugar to the Base 100 gelato premix to create a gelato base.
Dosage: 100g/kg mix
